Day 3 of Raw


Day 3 is always the hardest day for me on any new diet or exercise regimen. It either makes me or breaks me. Well today, I made it! I slapped temptation in the face and kept to my raw diet. 
I worked out to Grey's (George died, this can't be real) and had my morning smoothie. Today I made a banana, raspberry, mango, nectarine and plum smoothie with spinach, chia seeds and flax seeds. Delicious, plus working out is not so bad when you have Grey's and an awesome smoothie to distract you!
I had my usual grapefruit for morning snack and for lunch marinated kale and tomato salad and pineapple, cantaloupe and grape fruit salad. Yes I know, boring and the same lunch I've had all week, but its delicious and I love it.
My afternoon snack was also boring, just baby carrots, snow peas and 2 of my nut and seed balls! Predictable, but still yummy.
Dinner I decided to spice things up and made sushi and ginger dressed lettuce. 
It was exactly what I needed! I made cauliflower mock rice and spread it onto the Nori. I then added slices of carrots, cucumbers and avocado. I rolled it up, cut into pieces  and had raw soy sauce to dip in! It tasted just like the real thing, it was amazing! I also made this awesome ginger dressing by blending fresh minced ginger with carrots, celery, onion, raw soy sauce and oil! It tasted just like what the serve in the restaurant!. Who says going raw has to be boring!

Day 2 of Raw

Today went well! A few cravings but all in all, it was a great day! 
I woke up at 4:45 in the morning for my daily Grey's Anatomy/elliptical workout then took a quick shower. I packed the kids and mine lunches and made a vibrantly green smoothie using 1 cup almond milk, 1 frozen banana, 1 frozen clementine, 2 kiwis, 2 handfuls of spinach, 1 Tbsp chia seeds and 1 tbsp flax seeds. Blended adding water as needed and touch of agave syrup for a bit of sweetness! Delicious and Toren loved it too, we both sipped it on our way to school! 
I had my usual grapefruit for my morning snack....I love grapefruit and eat it everyday!
For lunch I had a bowl of my marinated kale and tomato salad with a handful of sprouted beans and a strawberry, pineapple grape fruit salad. Delicious as usual! 
My afternoon snack consisted of carrots, bell pepper slices and 2 of my nut and seed balls (these are amazing and oh so good!). 
I had crisp and juicy pear on the drive to Whole Foods (quite possibly the best grocery store ever!). My kids absolutely love Whole foods, so it's like a treat to take them there. I picked up some cacao nibs, raw cacao powder, raw soy sauce and raw pumpkin seeds as well as some other goodies and headed home!
I was excited to use my raw soy sauce and was craving Asian food, so I made a delicious raw stir fry. I made mock rice by   mincing cauliflower in my food processor. I added chopped broccoli, chopped snow peas, diced bell peppers, and carrot shreds. I mixed together a tsp of fresh ginger to 1 Tbsp of raw soy sauce and added a tbsp of water. I tossed it all together with the sauce and deliciousness was born!
I added half an avocado and glass of my freshly squeezed carrot, apple, kale juice to finish off my dinner.
This juice was amazing and so simple: 2 large carrots, 1 apple and a handful of kale! Definitely a repeater!

Going Raw

So I have decided to go on a raw/living food diet for the next 4 weeks! I am excited, but nervous at the same time! I love to cook/bake so this will be a challenge. Also avoiding all the temptations of processed and cooked foods will be difficult, but hey life's never easy! 
 Day 1:
I woke up at a grueling time of 5 this morning and jumped on the elliptical and worked out to an episode of Grey's Anatomy ( I love this!). After a quick shower, I used my juicer to make a crazy concoction of apple, kale, orange and carrot juice. It was delicious and refreshing, even Toren loved it! 
For breakfast I made a bowl of amazingly delicious blueberry banana chia seed pudding.
It's easy, quick and delicious! Will post recipe later! Toren loves this too so I usually double the recipe and we eat breakfast together at school! 
I packed a grapefruit for morning snack (I peel and eat it like an orange, for some reason people think this is weird, I think it's convenient!). For lunch, I had marinated kale and tomato salad  with and orange mint vinegarette; pineapple and strawberries; and a fruit purée and chia seed mousse with blueberries and crushed almonds! It was delicious and hit the spot!
My afternoon snack consisted of baby carrots and these absolutely amazing and delicious nuts and seeds balls I make (will post recipe later). 
For dinner, I was feeling rather adventurous and decided to experiment. I made zucchini noodles using my vegetable peeler(will be ordering a spiralizer soon) and an avocado, basil, spinach pesto! I added in fresh snow peas, carrot strips, bean sprouts and kale sprouts  and tossed! Garnished with red peppers and had an orange on the side! Amazing, refreshing, and surprisingly satisfying! 
Definitely a repeater meal!
